Ham, Salami & Sweet Potato Frittata

Create layers of gooey goodness for a savoury delight

Yum, yum, yum. Combining deli meats, veggies, and cheese in a decadent creamy filling, this colourful frittata will brighten up every breakfast, lunch, or brunch!
INGREDIENTS
• 650g sweet potato, peeled
• 200g ham
• 100g Hungarian salami
• 2 tsp olive oil
• 1 small red onion, sliced
• 6 eggs
• 300ml cream
• 1/4 cup chives, chopped
• 1 large zucchini, grated
• 1 cup grated Gruyère cheese

METHOD
Step 1:
Preheat oven to 200°C (180°C fan-forced). Grease and line base of a 20cm springform pan with baking paper. Place on a baking tray.

Step 2:
Cut sweet potato into 5mm thick slices. Place in a microwave-safe dish with 1tbsp water. Cover with plastic wrap and cook on high for 4 minutes or until just softened. Drain.

Step 3:
Cut ham and salami into strips. Heat oil in a frying pan. Cook ham, salami and onion for 5 minutes. Cool.

Step 4:
Whisk eggs until combined. Stir in cream and chives. Season with pepper.

Step 5:
Arrange a layer of sweet potato in base of pan. Top with a third of the ham mix, a third of the zucchini and 1/4 cup cheese. Repeat layers.

Step 6:
Pour over egg mix and top with remaining cheese. Cover with foil.

Step 7:
Bake for 30 minutes or until just set. Remove foil and cook a further 10 minutes or until golden. Cool in pan for 10 minutes before serving.
