Savoury Avocado Fairy Bread
With pepitas and sunflower seeds

Put a delicious and healthy twist on the traditional 100's & 1000's gem by using crunchy aromatic seeds and wholegrain bread (works a treat with gluten-free bread too!).

INGREDIENTS
• 60g (1/3 cup) pepitas• 55g (1/3 cup) sunflower seeds
• 55g (1/3 cup) sesame seeds
• 1 tsp turmeric
• 1/2 tsp ground cumin
• 2 tsp extra virgin olive oil
• 1 large ripe avocado
• 1 tbsp fresh lemon juice
• 6 slices bread of choice (eg. wholegrain, gluten free, sourdough)

METHOD
Step 1:Place the pepitas, sunflower seeds, sesame seeds, turmeric and cumin in a bowl and toss to combine.
Step 2:
Heat the oil in a frying pan over medium heat. Add the seed mixture. Cook, stirring, for 2-3 minutes or until aromatic and lightly toasted.
Step 3:
Season with salt and transfer to a plate. Set aside to cool.
Step 4:
Use a fork to mash the avocado in a bowl. Stir in the lemon juice, then spread avocado mixture over bread.
Step 5:
Place a piece of bread, avocado-side down, into the seed mixture and press gently to coat. Repeat with the remaining bread and seed mixture.
Step 6:
Cut slices into quarters and serve.
