Pineapple Cake

With cream cheese frosting

Prep time: 15 minutes | Cook time: 40 minutes | Serves: 8-10 people

This pineapple cake is super moist, super easy, super quick, and super delicious. Let's be honest, anything with cream cheese frosting is always going to taste good! It's a great idea to always have a can of pineapple in the pantry so if you need a quick dessert, you can always whip this one up if friends drop by unexpectedly.
INGREDIENTS
• 2 cups caster sugar
• 2 cups plain flour
• 2tsp baking soda
• 2 eggs
• 1tsp vanilla essence
• 450g can crushed pineapple
• Optional: Substitute 1/2 cup sugar for 1/4 cup nuts

Icing:
• 2 cups icing sugar, sifted
• 225g cream cheese
• 1tsp vanilla essence
• 110g butter, softened
Pineapple Cake Recipe
METHOD
Step 1:
Preheat oven to 180°C and grease a casserole dish.

Step 2:
Mix ingredients together in a medium bowl.

Step 3:
Pour batter into casserole pan and bake for 40 minutes.

Step 3
Allow to cool for 10 minutes before turning onto wire rack to cool completely.

To make icing:
Blend together icing sugar, cream cheese, vanilla and butter, until there are no lumps. Spread over cooled cake. Sprinkle with additional nuts or shredded coconut to serve.
