Broccoli Salad
With red grapes, bacon and croutons

Sick and tired of lettuce? And kale a little bit too much of a stretch? Why not try this colourful and delicious broccoli salad, with all the goodness of juicy grapes, salty bacon, and crunchy croutons. It's quick and easy to make, and goes down a treat.

INGREDIENTS
• 1 large head broccoli, cut into bite-size pieces• 1 cup croutons
• 8 slices bacon
• ⅓ cup red onion, diced
• 1 cup seedless red grapes, halved
• 1 cup mayonnaise
• 3 tablespoons apple cider vinegar
• 2 tablespoons white sugar
• ⅓ cup sunflower seeds (optional)
• Ground black pepper to taste

METHOD
Step 1:Place bacon slices in a large frypan or skillet and cook over medium heat until browned, turning occasionally. Drain bacon on paper towels, then cut into 1cm squares.
Step 2:
Combine together in a bowl the broccoli, onion, and grapes.
Step 3
To make the dressing, combine the mayonnaise, vinegar, sugar, and black pepper together in a separate bowl or jar. Pour dressing over broccoli mixture and toss to coat evenly. Cover bowl and refrigerate for 2 hours.
Step 4
Sprinkle bacon and croutons, and sesame seeds if using, over salad before serving.
If catering for a large crowd, this salad can also be served on a bed of cos lettuce leaves.
