Pumpkin Harvest Loaf
Spice up your winter with this delicious loaf

Have a little mashed pumpkin leftover? Or found a can of pumpkin soup at the back of the pantry? Put that pumpkin to good use in this delectable loaf that combines pumpkin, spices, walnuts and sweet choc chips.

INGREDIENTS
• 1 3/4 cup flour• 1 tsp baking soda
• 1 tsp cinnamon
• 1 tsp salt
• 1/2 tsp nutmeg
• 1/4 tsp ginger
• 1/4 tsp cloves
• 3/4 cup chopped walnuts, divided
• 1/2 cup butter
• 3/4 cup sugar
• 2 eggs
• 3/4 cup mashed/canned pumpkin
• 1 cup choc chips

METHOD
Step 1:Preheat oven to 350°C. Grease and line a 9x5in loaf pan.
Step 2:
Combine flour, baking soda, salt and spices and set aside.
Step 3:
In a large bowl cream butter and sugar together. Add eggs and beat well.
Step 4:
Add flour mixture gradually to butter mix, alternating with pumpkin. If using mashed pumpkin and mixture is a little dry, add a dash or two of milk.
Step 5:
Gently stir in 3/4 cup choc chips and 1/2 cup walnuts.
Step 6:
Spoon mixture into prepared loaf pan and flatten surface. Sprinkle over remaining walnuts and choc chips.
Step 7:
Bake for 40-60 minutes, periodically testing with a toothpick or cake tester until it comes out clean.
Step 8:
Cool in pan for 10 minutes then turn onto wire rack to cool completely.
