Apple, Cranberry & Macadamia Stuffing Log

INGREDIENTS
• 80g butter• 1 large brown onion, finely chopped
• 175g shortcut bacon rashers, trimmed, finely chopped
• 4 1/2 cups fresh breadcrumbs
• 1/4 cup finely chopped fresh sage leaves
• 1 medium granny smith apple, cored, finely chopped
• 1/2 cup dried cranberries
• 1/3 cup finely chopped macadamia nuts (can substitute with nuts of your choice)
• 1 egg, lightly beaten
• 4 thin slices prosciutto

METHOD
Step 1:Preheat oven to 180°C (160°C fan-forced).
Step 2:
Melt butter in a frying pan over medium heat. Add onion and bacon. Cook, stirring for 10 minutes or until onions have softened.
Step 3:
Transfer to a heatproof bowl and stand for five minutes to cool. Add breadcrumbs, sage, apple, cranberries, macadamia nuts and egg to onion mixture and stir to combine.
For log - Step 4:
Press stuffing firmly into a 25cm-long log shape. Place slices of prosciutto slightly overlapping on a piece of plastic wrap.
Step 5:
Place stuffing log at one long end. Roll up to enclose stuffing log. Remove plastic wrap and place log on a greased baking tray.
Step 6:
Bake for 30 to 35 minutes or until golden and firm. Stand for 5 minutes. Slice and serve.
For muffins - Step 4:
Grease muffin tray. Firmly press 1/3 cup stuffing into each hole.
Step 5:
Bake for 25 minutes or until golden and firm. Stand in pan for 5 minutes. Transfer to plate and serve.
