Beef & Bacon Rissoles
Make them ahead of time for a quick and delish dinner

Looking for something quick and easy for dinner? Or need to feed the masses for Sunday lunch? These rissoles will satisfy any meat lover and are easy to make ahead of time.
Looking for something quick and easy for dinner? Or need to feed the masses for Sunday lunch? These rissoles will satisfy any meat lover and are easy to make ahead of time.
INGREDIENTS
• 500g lean beef mince• 3/4 cup bacon, diced
• 1 egg
• 1 carrot, grated
• 1 brown onion, grated
• 1 garlic clove, crushed
• 2/3 cup breadcrumbs
• 2 tbs soy sauce
• 2 tsp Worcestershire sauce
• 2 tbs tomato sauce
• 1 pinch chilli powder to taste
• 2 tbsp coriander, finely chopped, optional
• 2 tbs vegetable oil

METHOD
Step 1:In a large bowl, combine mince, bacon, eggs, carrot, onion, garlic, breadcrumbs, soy sauce, tomato sauce, chilli powder and coriander if using.
Step 2:
Divide mixture into 8 rissoles and refrigerate for 30 minutes.
Step 3:
Heal oil in large frying pan over medium-low heat. Cook rissoles in two batches for 6 minutes each side, or until browned and cooked through.
Step 4:
Serve with mashed potato and steamed vegies, on top of zoodles/spaghetti, or with a coleslaw salad.
Option: Can be rolled into smaller balls to serve as nibbles.
